Pure Bite was born from a simple frustration: why did ethical chocolate always taste like a compromise? We spent two years working alongside farming cooperatives to find our answer.

Today we source directly from Ecuador, Peru, and Ghana — visiting each farm annually, paying above Fairtrade rates, and building relationships that outlast any single harvest.

The Craft

How a bean becomes a bar

Sourcing

We visit partner farms annually. Hand-selected, ethically paid, direct relationship — no middlemen.

Roasting

Low and slow. Each origin has its own roast profile developed over months of iteration.

Conching

48–72 hours of stone grinding. This is where texture becomes silk and harshness becomes nuance.

Tempering

Precise temperature control gives each bar its snap, its gloss, and its character.

Cacao Beans

Single-origin, fermented on the farm, roasted in small batches. The soul of every bar.

Maple Sugar

Unrefined Canadian maple sugar. Lower glycemic index, richer mineral depth than white cane.

Coconut Butter

Cold-pressed, unrefined. Replaces dairy with a clean, neutral creaminess that lets cacao lead.

Fleur de Sel

Hand-harvested sea salt, added in the final step. Lifts every aromatic note above it.
